Beautifully proportioned and contained. With a color between copper and cooked salmon, the flavors are an intermingling of minerality, yeast autolysis and fresh strawberry. The bead is tiny and persistent without being frothy, and lends a roundness to the palate to balance the crisp acidity. The impression is dry right through to the very tail end of the finish when a hint of sweet raspberry pops through. A lovely wine.

"Brut: I usually expect the non-vintage blends to be better balanced than their vintage dated counterparts, but in this case the 1995 outshines its stablemate in every regard. A blend of 60% Pinot Noir, 10% Pinot Meunier, and 30% Chardonnay, the nose carries the subtle scent of strawberries and apple blossoms and the faintest hint of butter, while the palate is tart and citrusy, with yeast and mineral overtones that carry the long finish. The fine bubbles give it a full mouthfeel. This is on the dry side of brut, and another version of the '95 is available as a slightly sweet Demi-sec.
